Our Pinot Noir

 

Cono Sur was born around the oldest Pinot Noir vineyards in Chile. We were the first in Chile to produce Premium Pinot Noir, and also the first ones to export it. Producing this variety has been Cono Sur’s most exiting challenge.

Our “Pinot Noir project” started in 1999, with the aim of producing the best Pinot Noir in Chile: unique, expressive and proud of its New World roots, while vinified according to the Burgundian tradition. From this same French DO comes Martin Prieur, an experienced Pinot Noir winemaker who has helped us select Chilean terroirs and advised us on optimum vineyard management.

For the production of Ocio and 20 Barrels Pinot Noir, the grapes are harvested by hand and after passing along the selection table, the bunches are destemmed taking care not to crush the berries. The fruit is then placed in open top tanks where it undergoes carbonic maceration at low temperatures. Later the grapes are foot trodden and colour extraction is enhanced by means of manual cap immersion. After fermentation the wine is placed in new French oak barrels, where it ages for approximately 14 months.
