It’s a well-liked aperitif and good for naturally oily and/or white meats: duck, pork, lamb, salmon; the simpler their cooking, the better. It’s ideal to serve with creamy pastas and the following cheeses: Bel Paese, mild Cheddar, Gruyere, goat cheese, Parmesan and Provolone.
