Smoked Salmon with Potato Salad
Peel the cooked potatoes and cut in 1cmx1cm cubes. Add the onion, red pepper, parsley, cilantro and chives.
Mayonnaise: Crack the egg in a bowl and using an immersion blender, blend until foamy. Then slowly add the olive oil in small amounts until it is emulsified. Add the lemon juice and mustard. Season with salt and pepper.
Add the mayonnaise to the potatoes and service with the smoked salmon with a touch of olive oil and merkén.
200 grams of smoked salmon filet
3 medium potatoes cooked with their skins
2 tablespoons purple onion, diced
1 tablespoon parsley, minced
1 tablespoon cilantro, minced
1 tablespoon chives, minced
1 tablespoon red bell pepper, diced
1 teaspoon olive oil with merkén (Chilean spice)
½ cup olive oil
¼ garlic clove, crushed
Juice of lemon, to taste
½ teaspoon mustard
Salt and pepper, to taste
