Veggie and Cheese Sandwich
Preheat oven to 200°C
In a wok, heat olive oil to smoking point and add mushrooms. Cook for about 5 minutes, until they are browned. Remove and set aside.
Slice open the bread and drizzle with a little olive oil and warm in the oven for three minutes. Remove and add cheese, sundried tomatoes, mushrooms and arugula. Serve promptly.
200 grams of paris (White) mushrooms
1 cup sundried tomatoes in oil
100 grams arugula
100 grams of gouda cheese
Olive Oil for sautéing
4 wholegrain sandwich rolls of your choice
