Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomatoes, chopped
  • 1 cup fish stock
  • 1 cup Bicicleta Pinot Noir Rosé
  • 1 lb mixed seafood (shrimp, clams, mussels, fish)
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 handful fresh cilantro, chopped

Instructions

    1. Heat the olive oil in a large pot over medium heat.
    2. Add the chopped onion and cook until translucent, about 5 minutes.
    3. Stir in the minced garlic and cook for another minute.
    4. Add the chopped tomatoes and cook until they start to break down, about 5 minutes.
    5. Pour in the fish stock and wine, bring to a boil.
    6. Add the mixed seafood, paprika, cumin, salt, and pepper. Reduce heat and simmer for 20 minutes.
    7. Garnish with fresh cilantro before serving.


Pair this recipe with garlic bread, grilled corn, or a couscous salad.
